Stuffed Acorn Squash
Serves 4
Prep time: 15 minutes
Cook time: 50 – 60 minutes
Ingredients:
– 2 acorn squash cut in half length wise, and seeds removed
– 3 Tbsp. unrefined coconut oil
– 1 lb. lean ground turkey
– 1 small green apple, skin removed and finely chopped
– 1/4 cup chopped white onion
– 4 cloves of garlic, chopped
– 1/4 cup dried cranberries, coarsely chopped
– 1/4 cup chopped walnuts
– 2 cups low sodium chicken broth
– ground nutmeg, cinnamon, sea salt, and ground clove for flavor
To prepare:
1. Preheat oven to 425 degrees F and place rack in center of oven.
2. Place halved squash in a large baking dish and use a fork to poke holes in the interior flesh of the squash. Lightly coat the flesh with 1/4 Tbsp coconut oil per squash.
3. In a medium skillet set to medium high heat, add remaining 2 Tbsp coconut oil and heat for 1 minute. Add the garlic and onions and stir to cook for 2 minutes then add the ground turkey. Allow to cook for a few minutes and add the apple, and sprinkle meat mixture with a pinch of sea salt, cinnamon, nutmeg, and light dusting of ground clove.
4. Stir occasionally until the turkey is almost cooked. Add the cranberries and walnuts and stir to combine. Add the meat mixture to the center of each squash.
5. Pour the chicken broth into the bottom of the baking dish and cover the dish with a lid or aluminum foil. Place in the oven and bake 50 to 60 minutes, or until the squash is soft.
*Serving suggestion: Steam fresh asparagus to serve on the side.*
