For ease and flavor, this is a delicious recipe when made in a slow cooker and cooked on low all day.
Spicy Pork Tenderloin Soup
Serves about 6 – 8
Prep time: 10 min
Cook time: 1 hour or at least 6 hours if cooked in a slow cooker on low.
Ingredients:
1 to 1.5 lb pork tenderloin, cut into rough cubes
1 small onion, chopped
1 green bell pepper, chopped
3 garlic cloves, minced
1 jalapeno pepper, seeds removed and chopped
1 tsp. chili powder
1 tsp. cumin
1 14oz. can diced tomatoes
1 14oz. can of black or pinto beans, rinsed and drained
4-5 cups low sodium chicken broth
salt and pepper to taste
Optional Toppings: avocado, fresh cilantro, tomato salsa, shredded cheese or greek yogurt.
Preparation:
1. Add all ingredients to a stock pot or slow cooker. Stir to combine and cover.
2. Allow to cook 1 hour on the stove top set to medium heat, or if cooking in a slow cooker at least 6 hours on low heat.
3. Test for seasoning, and spice you like. Ladle into bowls and top with the optional toppings.
4. Can be served with warm tortillas.
