This recipe could not be more simple and satisfying! For a lighter version of this recipe, prepare as directed and serve in lettuce cups versus on a bun.
Pulled BBQ Chicken Sandwiches

Ingredients:
3 boneless, skinless chicken breasts
1 bottle of your favorite BBQ sauce (low sodium and sugar is suggested)
1 1/2 cups shredded prepackaged “slaw” – undressed, raw
or make your own from sliced cabbage and carrots.
3 chopped green onions or scallions
Whole wheat buns, or lettuce cups – butter lettuce works really well!
Preparation:
1. In a medium/large sauce pan or pasta pot, fill with water and bring to a boil. Poach the chicken in the boiling water until cooked through.
2. Remove the chicken and let cool for a few minutes. Gently pull the chicken apart using a fork, and place the shredded chicken in a mixing bowl.
3. Pour the BBQ sauce over the chicken and stir to combine. You may want to reheat the BBQ chicken mixture.
4. To build your sandwich, spoon the BBQ chicken on the bun and top with the raw slaw and chopped scallions. Enjoy!
**Serving suggestion: Pair with a roasted sweet potato or steamed vegetable.
