Portobello Mushroom Pizzas

This recipe is a fun way to make a classic favorite more low in calorie and carbs. Serve as an entree or a unique appetizer for entertaining.

 

Portobello Mushroom Pizzas
Serves 4 – 1 mushroom per person
Prep time: 20 min
Cook time: 10 – 15 min

Ingredients:

4 large portobello mushroom caps, washed a thoroughly dried
1 cup cherry tomatoes
2 Tbsp. olive oil
1 clove garlic, minced
1/2 cup grated parmesan cheese
1/2 cup fresh basil leaves, chopped
Optional toppings: red onion, sliced olives, and cooked spinach.

Preparation:

1. Set oven to broil, and place rack near the top.

2. On a baking sheet, spray with a non-stick cooking spray and arrange the mushrooms. Spray to coat with olive oil, and broil for 5 minutes each side.

3. While the mushrooms are cooking, in a small skillet, heat 1 Tbsp olive oil in a pan and then add the garlic. Cook for at least 1 minute and add the cherry tomatoes. Cook until the mushrooms are removed from the oven.

4. Remove the baking pan from the oven and assemble your pizzas. Add the cooked tomatoes to the inside of each mushroom, top with any additional toppings and sprinkle with the cheese.

5. Place back in the oven and broil until the cheese is melted on top.

** Serve with a greed side salad to make a complete meal.
