Scallops are best when purchased fresh, not frozen. If you do not wish to prepare scallops, this is a wonderful flavored sauce to prepare with any white mild fish or even chicken.
Pan-Seared Citrus Orange Scallops
Serves 4
Ingredients:
16 to 20 sea scallops, pat dry with a towel
salt and pepper
3 Tbsp olive oil
1 garlic clove, minced
1/3 cup orange juice
1 Tbsp honey
Preparation:
1. Lightly season the scallops with salt and pepper, both sides.
2. In a large skillet (cast iron is great for scallops) set to medium-high heat, heat about 1 Tbsp olive oil. Add about half the scallops and allow to cook until golden brown, and flip. About 3 minutes each side.
3. Remove from pan and set on a side plate. Add the remaining scallops to the skillet, adding more oil if needed and cook the scallops. Remove from skillet and set aside with the other cooked scallops.
4. Set the pan to a medium to medium-low heat. Add in the remaining olive oil, then add the garlic and stir for 1 minute. Now add in the orange juice and honey, stirring as you add. Continue to stir while the mixture cooks and thickens, at least 5 minutes.
5. Pour the orange honey reduction over the plated scallops.
