Oven Roasted Salmon
Serves approximately 4-6
Prep time: 5 minutes
Cook time: 10-15 minutes
Ingredients:
1 1/2 lb. Fresh Salmon – preferably with skin on
2 Tbsp Unrefined Coconut Oil
2 Garlic Cloves – minced
Salt & Pepper to taste
To Prepare:
1. Preheat oven to 400 degrees F and place rack in center of oven.
2. On a baking sheet, line with aluminum foil and rub a small amount of coconut oil on the foil to prevent sticking.
3. Prepare the fish by slicing the fish into filets, at least 4 fillets or possibly six.
4. Place the filets skin side down on the baking sheet, and rub 1 tsp of coconut oil on the top side of each and sprinkle with salt and pepper and the minced garlic.
5. Bake for approximately 10 minutes and check for doneness when the skin starts to easily pull apart from the salmon.
*Suggested to be served with a side of sautéed greens.
