Orzo with Tomato and Spinach

Tomato-Spinach-Orzo-dinner

 

This dish is the perfect vegetarian meal when served with steamed asparagus, broccoli, or a side salad. Or can double as a tasty side dish to any entree.

Orzo Pasta with Tomato and Spinach
Serves 4
Prep time: 5 min
Cook time: 10 min

Ingredients:

1 – 1lb. bag of baby spinach, roughly chopped
1 pint of cherry tomatoes, cut in half
3 cloves of garlic, minced
2 Tbsp. olive oil
Salt and pepper to taste
1 1/2 cups Orzo pasta, cooked, rinsed & drained
*optional – 1/4 cup fresh basil leaves, chopped

Preparation:

1. Prepare Orzo pasta according to package directions, once cooked, rinse, drain, and set aside in a bowl.

2. In a medium skillet set to medium/low heat add the oil, allow to heat, and then add the garlic. Stir to cook the garlic until fragrant.

3. Add the cherry tomatoes and cook for 2-3 minutes. Add the spinach, and cook until wilted. Then add the basil (optional), and salt and pepper to taste.

4. Pour the contents of the skillet over the Orzo pasta and toss to combine.
