Quesadillas are the perfect way to recreate left overs from the week. Use chicken, meat, or seafood and combine with left over vegetables and cheese for an easy weekday meal.
Healthy Quesadillas

The contents of your quesadilla can include any meat or beans which you prepare or have left over in your refrigerator. For a fun twist, try this Pulled BBQ Chicken recipe.
Other ingredients – Any left over vegetables from the week, sliced tomato, avocado, shredded lettuce, bell peppers, sliced onion, fresh cilantro, or even cooked corn make great additions to your quesadilla and add nutrients.
3/4 cup shredded cheese
Corn or flour tortillas
Preparation:
1. Heat oven to 400 degrees F, and place rack in the center of the oven.
2. On a large cookie sheet, spray with a non-stick spray and arrange the tortillas. On half of each tortilla, add the meat and vegetables you have chosen and top with cheese.
3. Fold over each tortilla, and place the baking sheet in the oven. Keep watching the tortillas so they do not over cook, and remove when the cheese is melted.
4. Serve the quesadilla with a side of fresh salsa for dipping, and a side salad.
