Gluten Free Peanut Butter Cookies

These cookies are so good and chewy. We promise you will not miss the flour!

Ingredients:

1 Cup Natural Peanut Butter

1 Cup Granulated Sugar

1 Large Egg

1 tsp. Pure Vanilla Extract

To Make:

Preheat oven to 350 degrees F. Mix all ingredients in a medium size mixing bowl. The peanut butter is easier to mix at room temperature.

On a baking sheet lined with parchment paper, scoop 1 tbsp of cookie batter and place at least 1 inch apart on the sheet. Once all cookies are placed, flatten with your fingers and make the crosshatch pattern on top of each cookie with the back of a fork.

Bake for 10 minutes, or until golden on the edges.
