Easy Chicken Parmesan

Chicken Parmesan

Serves 4
Prep time: 5 min.
Bake time: 30 min.

Ingredients:

4 boneless skinless chicken breasts
1 egg
1/2 cup bread crumbs
1 cup part-skim mozzarella cheese
1/4 cup parmesan cheese
1 cup of jared tomato basil pasta sauce
2 tsp. dried parsley
2 garlic cloves minced
Salt & pepper to taste
dried or fresh basil

To Prepare:

1. Preheat oven to 350 degrees F, and move rack to center of oven.

2. In a small mixing bowl combine the bread crumbs, dried parsley, salt, pepper and garlic.

3. In a wide shallow bowl, mix the egg and coat each chicken filet with egg then the bread crumb mixture. Place the breaded chicken in a baking dish, lightly brushed with olive oil to prevent sticking. Bake the chicken uncovered for 20 minutes.

4. Remove chicken from oven and drizzle the tomato sauce on top of the chicken, and follow with sprinkling the mozzarella and parmesan cheeses and chopped fresh or dried basil.

5. Bake the chicken an additional 10 minutes.

*suggested to serve with steamed broccoli
