Healthy Pita Calzones
Ingredients:
1 cup cooked and chopped broccoli florets
1 cup shredded part-skim mozzarella cheese
1/2 cup part-skim ricotta cheese
2 tbsp. chopped basil (or 1 tbsp. dried)
1/4 tsp. garlic powder
pinch of salt
and pepper
Mix all of the above ingredients together in a medium size bowl.
Take 4 prepared pita bread and cut in half – set aside
To Make:
Preheat oven to 400 degrees F and line a baking sheet with aluminum foil.
Lightly spray each side of the pita bread with an olive oil mister. Fill each pita half with the cheese and broccoli mixture.
Lay the filled pita halves on the baking sheet and place on the center rack in the oven.
Bake 10 minutes or until the pita is lightly golden and the cheese is melted.
No Bake Chewy Granola Bars
Ingredients:
1/2 cup brown sugar
1 1/2 cups honey
1/3 cup coconut oil
1/4 tsp. fine sea salt
1 cup all-natural crunchy peanut butter (no salt or oil added)
2 tsp. pure vanilla extract
4 cups crisp rice cereal
2 2/3 cup old-fashioned oats
2/3 cup ground flax seeds
1/2 cup mini chocolate chips, coco nibs, or dried blueberries
To Make:
In a large bowl stir to combine the oats, cereal, and ground flax seeds.
In a saucepan over medium heat, mix the sugar, honey, coconut oil, and salt. Bring to a boil and stir continuously for 1 minute.
Remove the pan from the heat and stir in peanut butter and vanilla. Once smooth, pour over the bowl of dry ingredients and stir to combine.
Let this mixture cool, about 8 minutes. Once cooled, add the chocolate chips or other ingredients of your choice.
Measure parchment paper to fit your cookie sheet. Pour the granola ingredients onto the sheet and press out to make an even layer of the chewy granola mixture.
Place a second sheet of parchment paper on top and then top with another cookie sheet and press firmly to make the mixture compact. Remove and place the cookie sheet in your refrigerator to cool or let rest on the counter.
Once ready, you can cut the bars into a size of your choice. These bars can be wrapped in plastic wrap and kept frozen in a sealed bag or stored in an airtight container in your kitchen or refrigerator.
Chocolate Banana Pops
These are so easy to make and tasty to eat!
Ingredients:
1 ripe banana
1 cup low-fat, low-sugar chocolate milk ( or non-dairy milk like almond milk)
To Make:
Combine both ingredients in a blender until smooth.
Pour into 3 ounce popsicle molds and freeze for at least 3 hours.
