Apricot Glazed Pork Chops

For the best flavor, it is suggested to sear and then bake the pork chops in a cast iron skillet.

Apricot Broiled Pork Chops
Serves 4
Prep time: 8 min
Cook time: 10 – 15 min

Ingredients:

4 butterflied pork chops, boneless
1/3 cup apricot jam
salt and pepper
2 Tbsp vegetable oil

Preparation:

1. Preheat oven to 375 degrees F.

2. Preheat a cast iron skillet, or regular skillet, on medium high heat.

3. Rub both sides of the pork chops with a light dusting of salt and pepper. Add the oil to the pan and allow to heat.

4. Add the pork chops to the pan and sear both sides of each chop, about 2 minutes per side.

5. Brush to coat the top of each pork chop with the apricot jam.

6. Place the skillet (if oven proof – if not, transfer to a sheet pan) in the oven and bake the pork chops for approximately 8 to 10 minutes depending on how thick the pork chops are. Check for doneness of the pork and cook until the internal temperature is at least 165 degrees F.

7. Serve pork along side a fresh green salad or slaw prepared with this Wow Body Vinaigrette.
