Ratatouille is as a flavorful dish that can be easily prepared to save time and calories. Serve this entree with a side of brown or wild rice.
Chicken Ratatouille
Serves 4
Prep time: 15 min.
Cook time: 20 – 30 min.
Ingredients:
1 small eggplant, cut into 1 inch cubes
3 plum tomatoes, quartered
2 zucchini, cut lengthwise then into segments
1 red bell pepper, cut into thick strips
2 cloves of garlic, chopped
1 tsp dried thyme
1/2 tsp crushed red pepper flakes
3 Tbsp olive oil
4 – 4oz. boneless, skinless chicken breasts
Salt and pepper to taste
Preparation:
1. Preheat oven to 400 degrees F.
2. In a mixing bowl, add the first 8 ingredients. Sprinkle with salt and pepper and mix the the contents of the bowl so that the oil coats the vegetables.
3. Season the chicken breasts with salt and pepper and brush with olive oil. Set chicken into a greased baking dish. Add the vegetables to the dish arranged around the chicken and so that everything is nicely spread out and even to allow for the best cooking.
4. Cover the pan with Aluminum foil and bake in the oven for 20 minutes.
5. At 20 minutes check for doneness of the chicken, the center should no longer be pink.
6. Once the chicken is fully cooked, turn the oven on broil and set the pan on the top roasting rack of the oven. Roast for an additional 5 minutes just to a light brown for added flavor.
7. Remove pan from the oven and serve with prepared brown or wild rice.
