Roasted Red Pepper BaguettesÂ
Serves 4-6

Ingredients:
1 medium size baguette, sliced lengthwise (whole wheat preferred)
1 small jar roasted red peppers, cut into long strips
choose 4 oz. of fresh mozzarella cheese or goat cheese
2 cups fresh arugula, or 1/2 cup fresh basil leaves
Preparation:
1. Arrange the red peppers on the lower piece of the bread loaf.
2. Next, add the cheese of your choice over top of the peppers and top with either arugula or basil.
3. Top with the top loaf of bread and cut into sandwiches. You can serve this sandwich cold or warm wrapped in foil in a preheated oven until the cheese is melted.
