Cannellini Bean Tomato Soup
Ingredients:
6 cups low sodium chicken broth
1.5 cups tomato basil pasta sauce
1 can cannellini beans – rinsed and drained
1 Tbsp crushed red pepper flakes
2 boneless skinless chicken breasts – sliced thin, or cubed
1 bag baby spinach
1/2 cup chopped fresh basil
1/2 cup grated parmesan cheese
Salt & pepper to taste
To prepare:
1. In a stock pot or soup pan combine the chicken broth, tomato sauce, and beans to a simmer on medium high heat. Add the crushed red pepper flakes and turn the heat to medium low.
2. Lightly season the chicken with salt and pepper and add to the simmering pot. Cook the chicken for 3-4 minutes stirring occasionally.
3. Now add the bag of baby spinach, and stir to combine. Allow to simmer for a few minutes and when the spinach is wilted and the chicken is cooked, stir in the fresh basil and season with salt and pepper to taste.
*To serve, sprinkle the soup with parmesan cheese on top.
