Hearty & Healthy Turkey Bean Chili
Serves 4 – 6 adults

Cook time: 1 hour
Ingredients:
– 1 lb. lean ground turkey
– 2 Tbsp. olive oil
– 1 chopped onion (red or white)
– 4 stalks of celery chopped (about 1 cup chopped celery)
– 6 cloves garlic, chopped
– 1 green bell pepper chopped
– 1 14oz. can of whole tomatoes
– 1 small can of low-sodium tomato soup
– 1 can each low-sodium black beans, kidney beans, and pinto beans, drained and rinsed.
– 2 Tbsp. chili powder
– 1 Tbsp. ground cumin
– 1 Tbsp. dried oregano
– 2 cups purified water (or low-sodium chicken broth)
Optional toppings when prepared:
– Fresh cilantro
– Salsa
– shredded cheese
– 0% greek yogurt
– chopped avocado
– baked tortillas *see instructions below*
To prepare:
1. In a large stock pot, bring to a medium high heat and add olive oil. Heat the oil for 1 minute and add garlic, onion, and celery. Stir and cook for 2-3 minutes then add the ground turkey. Sprinkle the turkey with a pinch of salt and pepper, stir, and add the green pepper. Allow to cook 4-5 minutes.
2. Add to the pot the entire can (not drained) of whole tomatoes and use a spoon to break apart the tomatoes.
3. Add the can of tomato soup, stir, and add the drained and rinsed beans.
4. Add the 2 cups of water or broth and spices. Cover and let cook for 1 hour (or more) stirring occasionally to prevent to bottom from burning. Once the meat is cooked, you can begin to taste and add more spices for flavor or heat if you desire.
5. To serve, top with the optional toppings listed above.
Baked Tortillas
Cut flour tortillas into triangles, strips, or quartered, and place in an oven set to 350 degrees F, or in a medium light heated skillet. Bake just enough to get warm and slightly crisp but not browned. Great for dipping in your chili and for a satisfying crunch.
