Easy, healthy, and simply delicious salad dressing! Lite on calories but full of flavor.
Ingredients:
1 shallot peeled and quartered
1/4 champagne vinegar, or white-wine vinegar
1/4 extra virgin olive oil
1tbsp dijon mustard
3/4 tsp salt
fresh cracked pepper to taste
To prepare:
This dressing is so yummy, creamy, and
tastes great over any salad or used as a
dressing for cabbage or broccoli slaw. To
get the creamy texture, blend in a
blender. If no blender, chop the shallots
finely and then mix all ingredients with a
whisk.
Makes 8 servings – store in refrigerator
in an air tight container for up to 1 week.
