Chewy and sweet coconut macaroons make the perfect treat anytime of year. The sliced almonds in this recipe add a nice crunch and flavor. Prep time for this recipe is just 5 minutes and is easy to make with kids!
Ingredients:
1 package of sweetened shredded coconut (14 oz.)
1 C. sliced almonds
3/4 C. granulated sugar
1/4 tsp. salt
4 large egg whites beaten
To Make:
Preheat oven to 325 degrees F and line a baking sheet with parchment paper.
In a medium bowl, stir all ingredients together and then mix in the egg whites. Form cookies by scooping approximately 2 Tbsp. of cookie batter, form into mounds and place 1 1/2 inches apart on the baking sheet.
Bake 20-25 minutes, until the edges begin to brown. Let cool on cookie rack to harden before transferring. Make approximately 24 cookies.
